Ingredients for No-bake Lime and Lemon Cheesecake Using Thermomix

  • 2 packets of digestive biscuits
  • 160g liquid butter
  • 200g cream cheese
  • 1 can condensed milk
  • 2 packs of cream
  • 5 sheets of neutral gelatin
  • Juice of 2 limes
  • Juice of 1/2 Lemon

Instructions

Soak the gelatin sheets. Place 1 pack of digestive biscuits in mixing bowl and mix for 6 sec at peed 5. Add the second pack of biscuits and mix for 8 sec at speed 7. Add the butter and mix for 15 sec at  Speed 7. Pour out the mixture into a mold with a removable base, pat it down and put it in the freezer.

Whip the cream for 45 sec at Speed 3. Remove the gelatine leaves from soaking, add 1/2 glass of water and microwave it to dissolve, but without boiling. Add cream cheese to the whipped cream and mix for 30sec at speed 2 Add condensed milk, gelatin and lime juice and lemon juice.

Remove the mold from the freezer, pour in the cream cheese mix on the base and refrigerate for 3 to 4 hours before serving the lemon cheesecake.
