Noodles with tomato and egg is a traditional dish in China and one of the most popular dishes in Chinese cuisine. It is delicious, nutritious and incredibly quick and easy to make.

Ingredients for Noodles with Tomatoes and Egg
- 1 handful Chinese noodles or Rice Noodles
- 2 Large eggs
- 3 Medium tomatoes
- 1 bunch green onion (chopped)
- 2 cloves garlic (sliced)
- 1/2 tsp salt
- 1/4 tsp sugar
- 1 drop black vinegar (optional and can be substituted with any type of vinegar
Instructions
Chop the tomatoes. Beat the eggs. Add 1 drop of vinegar and sprinkle some salt.
Bring water to a boil, toss in the noodle, and add salt to taste. Once cooked, drain the water and set aside. In the meantime,, add cooking oil to a heated pan. When the oil becomes hot, pour the beaten eggs and stir slowly. After the eggs form into lumps, remove them from the pan and set them aside.
Add a bit more cooking oil to the pan, then stir fry green onion, garlic, and tomatoes until the juice from the tomatoes comes out. Add the eggs back in, also some salt and sugar, and stir for another 1-2 minutes. Serve the noodles with the tomatoes and eggs and garnish with green onion.
