This simple and tasty recipe is a quick and easy twist to the classic omelette.

Ingredients for Omelette with Quail Eggs And Vegetables

Omelette made with quail eggs, carrots, pumpkin, artichoke, courgette and leek
  • 6 quail eggs or 3 eggs
  • 1 medium Carrot
  • 1 small Courgette
  • 1 miniature Pumpkin or (1 lbs)
  • 1 Artichoke
  • 1 medium sweet potato
  • 1 Leek
  • 1/4 tsp Turmeric
  • 1/4 tsp cumin
  • Extra virgin olive oil
  • Salt to taste

Instructions

Dice the carrots, courgette, pumpkin, and sweet potato into cubes and mix them in a bowl. Cut the leek and let it dry slightly with the olive oil, turmeric, and cumin then add the vegetables.

Peel the artichoke and add it to the mixture and let them cook for 10 minutes, adding a little water to facilitate the cooking.

When the vegetables start to brown, add the eggs and leave to cook for 5 minutes.

Sprinkle with turmeric and salt to taste.
