Udon noodles are very versatile and can be served in soup, or stir fried. This quick and easy udon stir fry recipe is one of the simplest and most delicious noodle recipes ever.

Ingredients for Udon Stir Fry with Chicken and Vegetables
- 250g skinless boneless chicken thigh
- 1 bunch brocolli
- 1 bunch baby bok choy
- 1/2 bell pepper
- 2 Medium carrots
- 2 Tbsp soy sauce (marinade)
- 1 Tbsp maple syrup (marinade)
- 1/2 tsp sesame oil (marinade)
- 1 pinch ground black pepper (marinade)
- 1 pinch salt
- 2 bags udon noodles
- 2 cloves garlic
Instructions
Slice the chicken thigh, add the soy sauce, maple syrup, sesame oil and black pepper. Rub them into the chicken and leave it marinade for at least 15 minutes.
Chop the vegetables and heat up a non-sticky pan over medium heat with some cooking oil. Add the garlic and pour in the chicken with the marinade. Stir it occasionally until the color of the surface has changed. Stir fry the vegetables and cook for another 5-8 minutes.
Meanwhile, bring a pot of water to boil. Add udon noodles and cook for 2-3 mins. Drain the udon and rinse with cold water for 10 sec.
Stir the noodles with the chicken and vegetables for another 2-3mins and add a pinch of salt to taste. Serve the udon stir fry hot or warm.
