This vegan cashew cheese recipe uses cashew nuts as an excellent stable alternative base for the dairy regular cheese is derived from. Cashew nuts are healthy foods rich in fibre, protein, vitamins, and minerals. Cashew nuts cheese is also proven to be low in sodium.
Ingredients for Vegan Cashew Cheese
- ½ cup raw cashew nuts
- 320 ml water
- 2 tsp lemon juice
- 1 cup of sweet chaat masala
- 1 tsp salt
- Black pepper
- Nutmeg
- Garlic powder
Instructions
Place all the raw cashew nuts in an ovenproof dish, cover with boiling water and let them soak for at least 5 minutes or until they soften.
Blend the cashew nuts together with all the other ingredients using a blender until smooth. Then pour into a cooking pan over low heat and bring to a boil while constantly stirring.
After the mixture has a thicker consistency similar to cake or pudding batter, keep it on low heat for another 1 minute, still stirring then turn off the heat and turn it into a storage container with an airtight lid.
Allow it cool before storing it in the fridge.
