A super quick and easy dish but also amendable with minced chicken, turkey, beef, or pork for a meaty version.
Ingredients for Vegetarian Lettuce Wrap
- 2 Tbsp Extra Virgin Olive Oil
- 2 Tbsp garlic (grated)
- 1 Tbsp ginger (grated)
- 1 Tbsp soy sauce
- 1 Tbsp apple cider vinegar (or vinegar/rice vinegar)
- 1 tsp sesame seed oil
- 1 Tbsp vegetarian Hoisin sauce
- 1 Tbsp coconut sugar (or sugar/stevia/agave nectar/honey)
- 1 piece extra firm tofu (finely chopped)
- 1/2 Medium onion (finely chopped)
- 1/2 Medium red bell pepper (finely chopped)
- 4oz mushroom (finely chopped)
Instructions
Heat olive oil in a skillet over medium heat. Add minced ginger and garlic, and sauté for 1 minute. Add the tofu and cook for 3 minutes. Then add onion, mushroom, and red bell pepper, and stir fry for another 3 minutes till all turn tender.
Mix 1 tbsp soy sauce, vinegar, sesame seed oil, vegetarian Hoisan sauce, and sugar in a small bowl. Pour the mixture sauce into a skillet and stir fry for 5 minutes or till the liquid evaporates.
To serve, fill lettuce leaves with filling and garnish with green onions on top.
